(Franche-Comte) Available only September-April. Now in and really yummy and very squidgy, in a good way! Truly magnificent cheese. Cheese made from cows milk fed on an Autumn diet of sweet hay. Soft runny interior enclosed in orange/pink rind and then wrapped in a band of spruce bark (from farmers own trees)
